Almond Horseshoe Cookies

These cookies are amazing. Chewy and covered in toasted almonds and dipped in dark chocolate. YUM! I don't bake a lot of sweets as you have noticed. I am much more of a savory type. My kids beg me every so often to bake some cookies. I give in every now and then. This is a recipe that was given to me by the kitchen at Tanque Verde Ranch in Tucson, Arizona. I changed it up a bit. I added almond extract and used vanilla bean paste. I love the stuff, it makes all baked goods taste amazing, something about those little tiny vanilla bean seeds that seem to dance on my taste buds. These cookies are chewy and delicious, loaded with lots of toasted almonds and dark chocolate, you can't go wrong here . . . enjoy and thanks to the kitchen at Tanque Verde Ranch for graciously sharing this recipe with me.

Ingredients
- 1 3/4 pounds almond paste
- 7/8 pounds confectioner's sugar
- 1 1/2 teaspoons fresh squeezed lemon juice
- 1/2 cup egg whites (about 5 eggs)
- 1 1/2 teaspoon vanilla bean paste (or vanilla extract)
- 16 ounces crushed almonds
- 1 1/2 cups dark melting chocolate wafers
- 1/2 teaspoon Almond extract
Instructions
- In a large mixing bowl combine almond paste, confectioner's sugar, egg whites, lemon juice and vanilla bean paste. Mix well until all ingredients are combined. Cover with plastic wrap and chill overnight. Roll out dough and add in crushed almonds. Roll into 4 inch logs. Bend and shape into a horseshoe. Place on lined cookie sheet and bake at 350 degrees for about 12-15 minutes. Remove from oven and allow to cool. Melt chocolate with almond extract in microwave for 30 seconds, mix and heat again until chocolate is melted. You may have to repeat depending on the microwave. Dip cookies ends into chocolate and allow to cool and rest on parchment paper. Allow to cool for 10 minutes before serving.
