- 1 3/4 pounds almond paste
- 7/8 pounds confectioner's sugar
- 1 1/2 teaspoons fresh squeezed lemon juice
- 1/2 cup egg whites (about 5 eggs)
- 1 1/2 teaspoon vanilla bean paste (or vanilla extract)
- 16 ounces crushed almonds
- 1 1/2 cups dark melting chocolate wafers

- In a large mixing bowl combine almond paste, confectioner's sugar, egg whites, lemon juice and vanilla bean paste. Mix well until all ingredients are combined. Cover with plastic wrap and chill overnight. Roll out dough and add in crushed almonds. Roll into 4 inch logs. Bend and shape into a horseshoe. Place on lined cookie sheet and bake at 350 degrees for about 12-15 minutes. Remove from oven and allow to cool. Melt chocolate with almond extract in microwave for 30 seconds, mix and heat again until chocolate is melted. You may have to repeat depending on the microwave. Dip cookies ends into chocolate and allow to cool and rest on parchment paper. Allow to cool for 10 minutes before serving.

Creative Bird Feeder and Flowers, this is where I spend some time each day watching birds at the Ranch. It can get interesting, rattlesnakes also love to hang out here.

What a great cookie recipe! I’ve made almond horns but without the almond paste and they fall apart. I think I will try your recipe. Thank you for sharing it on the #HomeMattersParty
