Berry Basil Harvest Salad

I don’t know about you, but I have been loving all the fresh produce at the store. From fresh berries to tart apples and fresh peaches. I am also loving the fact that there are more choices when it comes to mixed greens. I love the baby kale mixes. This one was super fresh and triple washed. So it saves on time. I enjoy candied pecans in my salads, they add a nice crunch. This mixed green had baby beet greens. I love the color they add to a nice salad. You know by now I try to eat a salad a day. I really never get tired of salad. It is very forgiving. You can add anything you want to salad. Today I was inspired to add fresh garden basil, blueberries and strawberries. And topped with blue cheese and candied pecans. This was something you would see at a 5 star restaurant. It was amazing. The avocado was perfectly ripe, adding the perfect compliment. Berry Basil Harvest Salad
- 6 ounces mixed greens
- 1 avocado, slice
- 1 cup blueberries
- 1 cup strawberries, sliced
- 1 cup candied pecans
- 1/4 crumbled blue cheese
- Fresh basil sprigs
Honey Vinaigrette
- 1/4 cup red wine vinegar
- 1/4 cup extra virgin olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon raw honey
- Salt and pepper to taste
Directions for Honey Vinaigrette
- In a small bowl add vinegar, olive oil, mustard, honey, salt and pepper.
- Mix until all ingredients are blended.
Directions for Salad
- In large salad platter layer your mixed greens, avocado, blueberries, strawberries, pecans and blue cheese.
- Drizzle dressing and serve.
Notes
- For a Dairy Free option, just omit the blue cheese.
