Arugula Salad with Sweet Vidalia Onion Dressing

I am sorry I am behind on my posts. I went to San Diego for a few weeks. It was a much needed vacation. Life has been so busy. No one every warned me that summers would be busier than the school year. Kids require much more time when they need you to drive them around. My son is just getting ready to drive himself to school. I am sad that our special time in the car will be over. That one on one time is something I treasure. Feeling a bit nostalgic today, knowing that the school year is starting next week. A word of advice treasure every moment with your children. It goes by so fast. And before you know it they are all grown up. I made a great dinner for my family this weekend. This is the salad I made. It was amazing. So here is the recipe for the Arugula Salad with Sweet Vidalia Onion Dressing is the perfect mix of fresh garden produce and a tangy and slightly sweet dressing. I am not a huge fan of sweet dressings and my husband doesn't care for them at all. So I have to tame them down with extra vinegar. I grated fresh vidalia onions in the dressing and it was awesome. The poppy seeds were a last minute addition. I loved the dressing with arugula, that little bit of sweet and tangy was the perfect pairing with the spicy arugula. Salad
- 6 ounces organic arugula (organic is mild in flavor)
- 1/2 cup julienne carrots
- 1 cup heirloom tomatoes, sliced
- 1 cup cauliflower florets
- 1 avocado, sliced
- 1/4 cup radishes, sliced (a few go a long way)
Sweet Vidalia Onion Dressing
- 4 tablespoons prepared honey mustard dressing
- 2 tablespoons white wine vinegar
- 1 tablespoon grated Vidalia onion
- 1/2 teaspoon poppy seeds
- pinch of cayenne pepper
Dressing
- In small mixing bowl add honey mustard dressing, white wine vinegar, grated Vidalia onion, and poppy seeds.
- Add a pinch of cayenne pepper.
- Mix until all ingredients are blended.
Salad assembly
- Layer arugula, carrots, tomatoes, cauliflower, avocado, and radishes.
- Drizzle with Sweet Vidalia Onion Dressing and serve immediately.
