30-Minute Chicken Soup

Sticking to my healthy New Year's goal I am making easy, delicious and healthy meals for my family. This amazing "30- Minute Chicken Soup" is not only healthy, but easy and simple to make. I bought a pre-roasted chicken and was wanting to create something different for dinner. I used it to make this amazing low-carb Chicken Soup. The best part is that I prepared it in under 30 minutes. I was amazed when I discovered that you can purchase the chicken already cut up and deboned. How convenient is that? Seriously, it makes it so quick and simple to make soup or even chicken salad. For this soup I used the prepacked chicken, prepared organic chicken stock, fresh thyme and frozen veggies. It can't get much easier than that. I didn't make a large batch, but there wasn't a drop left after the kids filled there bowls several times. There is nothing like a great bowl of warm soup on a cold winter's night. Ingredients
- 32 ounces organic chicken stock
- 1 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1 teaspoon fresh thyme leaves
- 1 tablespoon Worcestershire sauce
- 1/2 cup of long grain brown rice
- 4 cups chopped roasted chicken
- 3 cups frozen vegetables
Instructions
- In a large soup stock pot add chicken broth and bring to a boil. Add salt, pepper, garlic powder, Italian seasoning, fresh thyme, Worcestershire sauce, brown rice, chopped chicken and vegetables. Cook over medium high heat for about 25 - 30 minutes. Garnish with fresh thyme leaves and serve.
