This 5 ingredient salad will bring a smile to your guests when they see this beautiful and elegant Water Cress Salad with Pomegranate Dressing. This recipe is easy and simple with a 5 star presentation. You can’t go wrong here and the best part is it only takes fifteen minutes to make it. This would be perfect for your Thanksgiving dinner menu or perfect for the holidays ahead. I made it for lunch and enjoyed it with a nice glass of Sauvignon Blanc, it was the perfect paring. Ingredients
- 4 cups Water Cress
- 1 pear sliced
- 1/4 cup pistachio nuts
- 1/4 cup pomegranate seeds
- 2 tablespoons blue cheese crumbles
- Pomegranate Vinaigrette
- 1/4 cup extra virgin olive oil
- 1/4 cup pomegranate vinegar
- 1/2 teaspoon dijon mustard
- 1/4 teaspoon poppy seeds
- 1/4 teaspoon salt
- 1 teaspoon honey
- Fresh ground pepper
Instructions
- Wash water cress and trim stems. Slice pear and layer water cress, pear, pomegranate seeds and pistacio nuts. Drizzle with pomegranate dressing and serve.
- Dressing: in a small bowl mix olive oil, vinegar, mustard, honey, salt, fresh ground pepper and poppy seeds until fully incorporated. Use as needed, store extra dressing in air tight container.
Notes
- TIP: Make sure to cut the pear right before serving, otherwise it will turn brown. I use an apple core/slicer to cut the pear, this make it easy and the slices are uniform.
