Turkey Tettrazini

I was inspired to type up my recipe for Terizzini today, I had a neighborhood friend ask me for a recipe for dried out turkey, so Linda Fordyce this recipe is for you! I love the combination of mushrooms, cream sauce, cheese and pasta. This recipe can be made with any type of pasta you have on hand and is usually made with spaghetti, thus spaghetti tetrazzini. The white wine really works perfectly with the butter, mushrooms and garlic. If you don’t do alcohol you can substitute chicken broth. this is an amazing dish – and it is perfect for dried out turkey or chicken! Got to love that . . .

Ingredients
- 2 cups chopped roasted turkey or chicken
- ¼ cup olive oil
- 2 tablespoons butter
- 2 cups sliced mushrooms
- 3 large garlic cloves; chopped finely
- 1 cup dry white wine
- 1 cup heavy cream
- 1 (8 ounce) cream cheese
- 1 – 2 pinches of nutmeg
- 1 cup frozen petite peas
- Salt and Pepper to taste
- 1 1/2 cups Parmesan Cheese
- 1 pound ziti pasta
- 1 cup pasta water
Topping
- 1 cup panko bread crumb
- ½ parmesan cheese
- 2 teaspoons dried parsley
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
- In deep pot sauté olive oil, mushrooms and garlic for approximately 3 minutes or until mushrooms are cooked and the garlic is light brown. Then add in 1 cup white wine and allow wine to reduce by half, about 3 – 5 minutes. Once wine has reduced add the cream, cream cheese and parmesan cheese, mix until the cream cheese is melted, season with salt and pepper. Add in frozen peas and turn off heat and allow to rest. Meantime cook ziti pasta according to package instructions – minus one minute for aldente. (Reminder reserve 1 cup pasta water to add into mushroom cream mixture.) In a separate mixing bowl add bread crumbs, parmesan cheese, parsley, garlic powder, salt and pepper. Mix until all ingredients are blended. Set aside. Stain pasta and add to cream sauce, season with nutmeg and then add in 1 cup pasta water. Mix well and transfer to deep baking pan. Add topping mixture and bake at 375 for 25 minutes. Serve immediately.
