Stuffed Jalapeno Peppers

These Stuffed Jalapeño Peppers are a real treat. They are so delicious you can’t eat just one or two. This native New Mexican loves her chile peppers. I am always looking for new recipes. This is one of my favorties . . . . trust me once you make this recipe, you will find yourself eating one or two then going back for another, then another! The combination of the spicy roasted jalapeños with the sausage and cheese mixture is simply the best. This recipe for Stuffed Jalapeno Peppers is way better than any other jalapeño poppers I have ever had. I have my husband Ted to thank for this dish he found a recipe and of course - I improved upon it and changed it up a bit. Ingredients
- 1 pound hot sausage (Jimmy Dean Breakfast Sausage)
- 8 ounces cream cheese
- 8 ounces parmesan cheese
- 4 scallions sliced thinly
- ½ teaspoon garlic powder
- 1 pinch red pepper flakes
- 24 jalapeno peppers (sliced, deveined and deseeded
- 1 pair of latex gloves
Directions
- Wearing your latex gloves slice the jalapeño peppers length wise. Remove the veins and seeds. Place on a cookie sheet side by side.Meantime fry the sausage on medium high heat, add garlic powder and red pepper flakes. Cook sausage until thoroughly cooked about 20 – 25 minutes. Drain any extra grease and set aside. Allow to cool slightly. In a large bowl mix, cream cheese, parmesan cheese, scallions and sausage mixture. Spoon mixture into jalapeño peppers. Bake in a pre-heated oven at 425 degrees for 15 minutes or until slightly brown. Remove and serve immediately.
