These Stuffed Jalapeño Peppers are a real treat. They are so delicious you can’t eat just one or two. You will find yourself going back for another, then another! The combination of the spicy roasted jalapeños with the sausage and cheese mixture is simply the best. Way better than any other jalapeño popper I have ever had. I have my husband Ted to thank for this dish he found a recipe and of course – I improved upon it!
Let me know what you think . . . . . post a comment or two.
Directions: Wearing your latex gloves slice the jalapeño peppers length wise. Remove the veins and seeds. Place on a cookie sheet side by side. Meantime fry the sausage on medium high heat, add garlic powder and red pepper flakes. Cook sausage until thoroughly cooked about 20 – 25 minutes. Drain any extra grease and set aside. Allow to cool slightly. In a large bowl mix, cream cheese, parmesan cheese, scallions and sausage mixture. Spoon mixture into jalapeño peppers. Bake in a pre-heated oven at 425 degrees for 15 minutes or until slightly brown. Remove and serve immediately.
