
Strawberry Spinach Salad with Honey Mustard Dressing made with organic baby spinach, candied pecans, goat cheese, strawberries, fresh basil, and topped with a simple homemade honey mustard dressing. To keep it simple I bought candied pecans from my local grocery store.
Strawberry Spinach Salad with Honey Mustard Dressing

- 6 ounces baby spinach
- 1 cup candied pecans
- 12 strawberries (sliced)
- 1/4 cup crumbled goat cheese
- 10 fresh basil leaves, sliced
- 1/4 cup olive oil
- 3 tablespoons white balsamic vinegar
- 1 tablespoon raw honey
- 1 teaspoon whole grain mustard
- 1or 2 pinches fresh ground pepper
- 1/4 teaspoon sea salt
- 1 tablespoon mayonnaise
- Add all ingredients into a small mixing bowl and whisk until fully combined.
- Layer a large salad plate or bowl with spinach.
- Then layer pecans, goat cheese, fresh sliced strawberries and basil.
- Drizzle with dressing.
- Save any unused dressing in fridge for up to 3 days.
- Garnish with whole sliced strawberries.

Organic Baby Spinach makes a great base for this Strawberry Spinach Salad with Honey Mustard Dressing. When serving it to for a special occasion I make an effort to remove the thick stems from the spinach. If you are all about saving the greens and utilizing all the produce I recommend putting them into a baggie and adding them to a smoothie the next morning.

I love keeping few strawberries for garnish. Simply slice them thinly leaving the leave in tact. Garnish salad with these lovely beauties! If plating on individual plates, save a few extra and garnish each dish. Since this salad was made for a brunch I garnished the large salad plate.

What makes this salad amazing is the simple dressing – it has just a few ingredients including raw honey, white balsamic vinegar, sea salt and whole ground mustard. I recommend using a high quality brand – this is imported from France. Great mustard and honey make all the difference!
