One of my favorite things to do is create new recipes. I am often inspired by some fresh vegetable or some fresh greens. This salad was inspired a perfectly ripe and extra large avocado. I wanted something fresh and healthy. Salad is a part of my daily diet and don’t want to get stuck with the same old salad recipes. I was pleasantly surprised by this combination of Spinach Salad and Black Bean Salsa they were just perfect together. Tasty, crunchy and delicious. Each bite was bursting with flavor. I just had to share it with you.

Spinach Salad with Black Bean Salsa
1 (6 ounce bag) of baby spinach
1 avocado, sliced
1 Persian cucumber, sliced
½ cup julienned carrot
½ cup celery; sliced
1 cup mini heirloom tomatoes; sliced in half
Garnish with Black Bean Salsa (see recipe)
Salad: In large flat bowl layer your ingredients: spinach, cucumber slices, carrot, heirloom tomatoes, celery and avocado. Top with black bean salsa and serve immediately.
