Here is a simple Mixed Salad with Creamy Italian Dressing – you can leave out the mayo in the dressing if you are watching your fat intake.
Dressing
¼ cup Olive Oil
¼ cup red wine vinegar
½ teaspoon Italian seasoning
¼ teaspoon garlic powder
1 tablespoon Dijon mustard
1 tablespoon mayonnaise
¼ teaspoon Salt
Fresh ground pepper
Dressing: In small mixing bowl add all ingredients and mix well until all ingredients are blended. You can also use a blender.
Salad assembly: In large flat salad bowl layer lettuce, red onion, tomatoes, cucumber, purple cabbage, black olives, blue cheese and peppers. Drizzle with dressing and serve immediately.

Thanks for posting these great recipes and encouraging us to eat a salad a day. I have eaten a salad everyday this week and looking forward to making one of the ones you have posted. Of all of these so far which will keep the longest?

June so great to hear from you. Glad to have you on board. All the salad will last 2 -3 day if you do not add the dressing. The SECRET to keeping salads is to make sure they are not too wet. Moisture causes the lettuce and veggies to wilt. Use a salad spinner for the best results.
Thanks!
