I made this raw vegetable salad last night for dinner. It was so crunchy and yummy – I wanted to share it with you. My husband Ted went hunting in Canada last fall and came back home raving about this raw vegetable salad the lodge owner had served the hunters for dinner. He said, “I watched her make it and it was super easy, she used a bag of raw mixed vegetable, plum tomatoes, onion and added wishbone dressing”. So he came home with all the ingredients and made it for me. Don’t get me wrong it was good and a great way to eat raw vegetables, but you know me I can’t ever follow instructions – Ha, Ha! I had to make it my own. So I changed it up a bit and added my own homemade salad dressing. It is super easy and super tasty! Enjoy. . . .
Raw Vegetable Salad Dressing:
¼ cup red wine vinegar
¼ cup olive oil
¼ teaspoon garlic powder
½ teaspoon Italian seasoning
1 teaspoon stone ground mustard
2 tablespoons mayonnaise
Salt and Pepper to taste
Dressing: In a small bowl or food processor add all dressing ingredients. Pulse or mix until all ingredients are well blended.
Salad: In large deep mixing bowl add all your ingredients: Add dressing mix well let marinate up to two hours before serving.
P.S. I didn’t have plum tomatoes so I left them out. They are really good in this salad.
