That’s what I am talking about, tangy, fresh and delicious Salad! For all my salad lovers here you go . . . . Shrimp Mediterranean Salad. This is my latest and greatest salad creation. I love salad of all kinds, but Greek Salad is my favorite. This recipe is a slight change from my average Greek Salad. A local restaurant serves something similar but I changed it up a bit. I added shrimp and green olives. The olives add a nice briny zing. The shrimp were amazing. Freshly frozen, but were firm and tasty. I wanted to save a little time and had thawed some shrimp for shrimp cocktail, but instead made this amazing salad. I change my mind a lot, especially when I have a spark of creative inspiration. I don't know about you, but this summer heat wave is doing me in. I do not want to cook, we have had nearly 100 plus or minus degrees for a month now. I find myself grumpy and not wanting to fire up the stove or oven. My poor garden is frying up. Very sad. I am melting in my office right now, swamp coolers stink. They just don't cut it when it is 100 degrees. Well enough of my whining.

Notes
- Tip: Always thaw shellfish in refrigerator. Best if thawed overnight. This salad can be made up to 8 hours ahead of time. Do not add shrimp until ready to serve. Reserve the dressing in an air tight container and cover salad with plastic wrap. Make sure it is air tight, air is what causes lettuce and veggies to wilt.
