Mediterranean Shrimp Salad

- Shrimp Mediterranean Salad
- 6 ounce mixed greens
- 1 cup julienned carrots
- 4 small heirloom tomatoes; sliced in half
- 1 purple daikon radish, sliced thinly
- 1/2 cup green olives, drained
- 2 ounces crumbled Feta cheese
- 1/2 pound large frozen shrimp, thawed
- Tangy Greek Dressing
- Tangy Greek Vinaigrette
- 1/4 cup Olive Oil
- 1/4 cup red wine vinegar
- 1/2 teaspoon dried Greek oregano ( you can substitute regular oregano)
- 1/4 teaspoon dried dill
- 1 tablespoon capers, smashed
- 1/4 teaspoon garlic powder
- 2 tablespoon fresh lemon juice
- 1 tablespoon Dijon mustard
- Salt and fresh ground pepper to taste
- Directions: layer mixed greens, tomatoes, radishes, olives and feta cheese. Drizzle with dressing and serve immediately!
- In small mixing bowl add all ingredients and mix well.
- With a fork smash the capers.
- Mix again, until all ingredients are blended.
- Add salt and pepper to taste.
- Layer power greens, carrots, tomatoes, radishes, olives, feta cheese and shrimp.
- Drizzle with dressing, lightly toss.
- Serve immediately!
- Tip: Always thaw shellfish in refrigerator. Best if thawed overnight. This salad can be made up to 8 hours ahead of time. Do not add shrimp until ready to serve. Reserve the dressing in an air tight container and cover salad with plastic wrap. Make sure it is air tight, air is what causes lettuce and veggies to wilt.
