Ingredients
- 1 prepared deep graham cracker crust
- 1 can sweetend condensed milk
- 4 ounce cream cheese (room temperature)
- 4 tablespoons fresh squeezed lemon juice
- Zest of one lemon
- 1 (20 ounce) can crushed pineapple, well drained
- 1 cup sweetened flaked coconut
- 1 cup maraschino cherries, drained and chopped (save a few whole cherries for garnish)
- 1/2 chopped pecans
- 1 1/2 cups whipped topping plus extra for garnish
Instructions
- In a large mixing bowl combine, sweetened condensed milk, cream cheese, lemon juice, lemon zest. Mix with electric mixer for about one minute until combined. Add pineapple, coconut, cherries, and pecans. Mix for about 20 seconds until blended. Gently fold in whipped topping. Pour into pie crust. Garnish with whipped topping and maraschino cherries. Refrigerate for 3 hours or overnight. Slice and serve.
