Kale and Spinach are full of protien, yes protien! This healthy salad is full of nutrients and delicious Power Greens like Baby Kale and Baby Spinach topped with purple cabbage, avocado, garbanzo beans, cucumber, carrots, celery, plum tomatoes and feta cheese. Served with a delicious home-made Basil Vinaigrette. This healthy salad was inspired by a bag of power greens I bought at Trade Joe’s. I needed a quick easy salad to serve for a lunch meeting. It was a huge hit.
Basil Vinaigrette: In food processor or blender add balsamic vinegar, olive oil, basil leafs, garlic clove, and Worcestershire sauce, mix until basil and garlic are finely chopped. Then add the whole ground mustard and mix for a few seconds until it is incorporated. Chill and serve. (Dressing will keep up to 3 days in refrigerator)
Salad Assembly: In large flat bowl layer your ingredients: power greens, mixed greens, cucumber slices, garbanzo beans, petite plum tomatoes, avocado, carrots, celery, heirloom tomatoes, and feta cheese. Drizzle with basil dressing, toss and serve immediately. Garnish with sunflower seeds.
