Pineapple Mango Smoothie this morning’s breakfast. It really makes it fun that my kids go crazy over fresh smoothies. I have to say this and I am not paid to promote Trader Joe’s – but they have a great and reasonable assortment of frozen fruits including pineapple and mango. Costco has some great frozen fruit as well but I like the smaller packaging at Trader Joe’s. It is fun to mix it up. Sometimes I add a banana or strawberries or a little fresh grated ginger (little it the key word here, you don’t want the ginger to overwhelm the fruit). This smoothie was extremely tasty and made me feel like I was back in Hawaii on a tropical beach sipping a fancy drink. Sometimes I add yogurt to the smoothie as well. It is your smoothie, so have at it – get creative and have fun! This makes approximately 4 one cup servings – for my family of four – so you can divide and make smaller portions or add and make larger portions as needed.
TIP: You can make frozen popsicles with this recipe!
Pineapple Mango Smoothie Ingredients:
1 cup frozen Mango
1 cup frozen Pineapple
2 cups Coconut Water
2 tablespoons fresh lemon juice
Directions: Add mango, pineapple, lemon juice, and coconut water to the blender. Mix until fully blended about 1 – 2 minutes. Serve immediately.
