Persian Carrots and Sweet Peas

This is a simple and healthy holiday side dish. The round Persian Carrots give the dish a playful and fun table presence. The children and adults will eat this right up. My favorite part of this recipe is that it is simple and easy to prepare all you need is some sweet peas, butter, Persian carrots (Trader Joes) and some fresh parsley and thyme. Easy, easy and oh so delicious . . . served next to your Thanksgiving turkey of served with any special dinner. I am wishing you and yours blessings things Thanksgiving Holiday. Ingredients
- 1 (16 ounce package) Persian Carrots
- 1 (16 ounce package) Sweet Peas
- 2 Tablespoons Butter
- 1 teaspoon fresh Thyme
- 2 teaspoons chopped fresh parsley
- Salt and Pepper to taste
Instructions
- In a medium sauce pan steam carrots according to package directions add in sweet peas for the last two minutes of steaming. The key to a great vegetable is not to over cook them. You want to taste the flavor of the vegetables and that means cooking them gently. Pour out any excess water and add butter, herbs and season with salt and pepper. Serve immediately.
