Peppermint Chocolate Bundt Cake

Are you needing a simple and easy dessert. You will love this recipe - it is a box mix that I doctored up! Warning it is dangerous dessert for a real chocolate lover, you will want a second serving. I added some peppermint oil and it was fabulous, if I was served this as a guest at someone's home, I would never in a million years guess it was from a box. It was moist and rich with a deep dark chocolate flavor. Scrumptious for those of you that love chocolate. I ate a piece everyday until it was gone. I don't recommend baking it if you are living alone - it is one of the desserts that calls your name in the middle of the night. I took some time and garnished it with powdered sugar and some fresh mint from my garden. Not a bad presentation at all!

Ingredients
- 1 Chocolate Cake Mix with real chocolate chunks
- 1 cup water
- 1/8 teaspoon pure peppermint oil
- 3 eggs
- 1/3 cup vegetable oil
Garnish
- Hot fudge Topping
- 2 – 3 drops of pure peppermint oil
- Powdered sugar for sprinkling
- Mint leaves for garnish
- Directions: In large mixing bowl add eggs and beat well on medium for about 30 seconds. Add both packages from cake box into mixing bowl, including chocolate chips, oil and water. Mix again for 1 ½ minutes until all ingredients are fully blended. Pour into prepare bundt pan and bake in a preheated 350 degree oven for 33 – 35 minutes. (Test with tooth pick, poke in center if it come out clean it is fully cooked.) Allow to cool before plating. Garnish with powdered sugar, peppermint hot fudge and a fresh mint leaf sprig.

Notes
- If you want to know which cake mix I used - it was Duncan Hines Triple Chocolate with Real Chocolate Chunks and Real Fudge.
- TIP: For the real chocolate lovers you can add extra dark chocolate mini chips - about 1/4 of a cup!
