Maple Glazed Brussels Sprouts

How do the holidays sneak up so fast? I can’t believe Christmas is only ten days away! I haven’t wrapped a single gift or mailed my Christmas card yet. I am feeling the added stress the holidays bring . . . I need to slow down and breathe. I do this every year . . . plan too many things and never get them all done. I want you to slow down too and remember the holidays are not about things . . . what matters most are the memories we make with friends and loved ones. Try to keep in simple . . . that is great advice. And talking about keeping it simple here is a great simple holiday side dish your will want to make. I am not sure why I do this each year for the holidays . . . but I love trying new side dishes. This is a recipe I have played around with in previous years and served at Thanksgiving and at my Christmas dinner. I made it with Applewood smoked bacon this year and I loved, loved, loved it. The smoky bacon and maple syrup worked well together to give it a slightly sweet flavor. The combination of fresh herb added the perfect savory flavor, making this one of my all-time favorite holiday vegetable side dishes.

Ingredients
- 4 cups fresh brussels sprouts
- 2 slices applewood smoked bacon, cooked and chopped
- 2 tablespoons butter
- 2-3 tablespoons maple syrup
- Sea salt to taste
- 1/4 teaspoon dried dill
- 1 tablespoon fresh parsley - chopped
- 1 tablespoon fresh thyme (leaves only, stem removed)
Instructions
- Wash brussels sprouts.
- Trim any dead or wilted leaves.
- In a large saute pan fry bacon until crispy.
- Remove and set a side.
- In the same pan add butter and brussels sprouts.
- Add 1/4 cup water and cover.
- Cook for ten minutes or until brussels sprouts are fork tender.
- Add maple syrup.
- Season with sea salt, dill, parsley, thyme and chopped bacon.
- Mix and cook for about 3 minutes until the maple syrup has glazed and slightly evaporated.
- Serve immediately.
