Summer is a great time to eat healthy. And with the summer temperatures rising a fresh salad is just so refreshing. I adore heirloom tomatoes; they are so colorful and tasty. Tomatoes are just so much more delicious when they are in season. I grow several varieties of tomatoes in my garden. I guess I get my green thumb from my grandparents.
When I was growing up my grandparents had the most beautiful garden. My grandmother grew a wide variety of tomatoes and in the fall she would can them all and store them in the basement on these pine shelves. When I was little I loved to go down to the basement with her and look at all the beautiful jars filled with colorful tomatoes, beets, green beans, peppers, and homemade pickles. I loved the contrast of the stone wall, the pine shelves and the color jars. Ahhhh . . . that takes me back to some great and comforting memories.
This salad is in honor of fresh organic produce and my loving grandparents!

Heirloom Tomato Salad with Feta and Arugula
Ingredients:
½ bag (3ounce) organic arugula
2 Heirloom tomatoes
2 ounces crumble Feta cheese
Basil Vinaigrette
¼ cup extra virgin olive oil
¼ cup white balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon prepared pesto sauce
½ teaspoon chopped fresh oregano (or 1/4 dried oregano)
Fresh ground pepper and sea salt to taste
Dressing: In small mixing bowl add all ingredients and mix well until all ingredients are well blended.
Salad assembly: layer arugula, tomatoes, feta and drizzle with dressing. Serve immediately!
Great served with a crusty loaf of bread.
