Here is a Heart Healthy Salad you will love. The arugula gives this salad a spicy bite. If you are not keen on arugula you can substitute spinach or mixed greens. I like buying and assortment of prewashed salad bags to keep on hand. This makes it easy to make a salad anytime. I only buy 2 – 3 small bags (6 – 8 ounces) per week. I also like buying a head of purple cabbage and the small bag of mini bell peppers to keep on hand. They stay fresh for a long time. Remember when creating your salad the more color the more vitamins! This dressing is one of my favorites the white balsamic vinegar is slightly sweet but not too sweet. Dill Vinaigrette
¼ cup olive oil
¼ cup white balsamic vinegar
1 tablespoons Worcestershire
1 teaspoon Dijon mustard
½ teaspoon salt
¼ teaspoon garlic powder
¼ teaspoon dried dill
Fresh ground pepper to taste
Dressing: In small mixing bowl add all ingredients and mix well until all ingredients are fully blended.
Salad assembly: layer arugula, purple cabbage, bell peppers, hearts of palm, garbanzo beans, and avocado. Drizzle with dressing, toss and serve immediately!

It was hard to pick but this is going to be the salad for the week as I continue to eat a salad a day.

This is a very good salad, I never had hearts of palm and I like them. I cut up all ingredients and store them in separate containers and then when I am ready I layer the salad and drizzled with the dressing. I have a bowl with three different compartments so I can put different ingredients in them and at work just layer all and enjoy. My heart says “Thanks” for the heart healthy salad.
