Healthy Vegetable Frittata

This Vegetable Frittata makes for a great healthy breakfast or brunch. Frittatas are terrific because they are loaded with fresh vegetables and plenty of protein from the eggs, you can add nearly any type of vegetable to them. Over the years I have created dozens of frittatas and my family just loves them. They make great leftovers, and heat nicely in the microwave. Frittatas also makes a great light lunch with a side salad. I often serve them for brunch, you can easy double the recipe to feed a large group. I never get tired of them because I switch out the vegetables and herbs making them new and tasty every single time. They are a perfect recipe for using leftover vegetables. Ingredients
- 8 Eggs, well beaten
- 1 Red Pepper, chopped
- 2 cups Asparagus, chopped
- 2 cups Kale, chopped
- 1/2 Onion, chopped
- 1/4 teaspoon Italian Seasoning
- Pinch of red pepper flakes
- Salt & Pepper to taste
Instructions
- In a medium saute pan over medium heat, add olive oil and onion, cook until tender about 2-3 minutes. Add Italian seasoning and red pepper flakes, then add kale, asparagus, and red peppers. Season with salt and pepper. Cook vegetables until tender about 5 minutes, add beaten eggs and cook for about 2 minutes, then transfer pan into preheated 400 degree oven and bake until lightly golden brown, approximately 12- 15 minutes. Allow to set and cool for about 10 minutes, cut in wedge like slices, like a pie, gently loosen frittata edges with a spatula and serve.
Notes
- This makes a great light lunch with a side salad. Or double the recipe for your next brunch.
