This is my latest breakfast creation, "Ham and Cheese Breakfast Roll Ups." The inspiration came from the fact that I was totally out of eggs for breakfast and the fact that I get bored with making the same old thing, time and time again. I had purchased some puff pastry dough to make something, I really can't remember what, I thought what can I make with that. I saw a recipe for cinnamon rolls using puff pastry and immediately thought of something savory like ham and cheese. Well these were a brilliant idea, if I have to say so myself. Delicious and light, and the ham and cheddar cheese were the perfect mix with the buttery puff pastry dough. This was a simple and easy breakfast and would be a great addition to any holiday brunch. I heard from several of you this week, the crock pot recipes seem to be a big hit, so I will continue to post more of them, since they are easy. Let me know what you think, please comment below or message me on Facebook. Bon Appetit, Cecelia

Ingredients
- 1 package Puff Pastry (2 pastry doughs)
- 6 Slices of Deli Ham
- 6 Slices of Cheddar Cheese
- 1 egg, beaten
- Flour
- 1/4 parmesan cheese for topping
Instructions
- Thaw puff pastry according to package directions. Lightly flour your surface area and roll out puff pastry dough, across the center layer 3 slices of ham and 3 slices cheese per pastry sheet. Brush edge of pastry dough with beaten egg. Roll up each pastry sheet and snug as possible and cut into 1 inch slices. Brush egg wash over the tops of each sliced piece of dough. Bake on a cookie sheet lined with parchment paper at 350 degrees for 12 - 15 minutes or until pastry is light brown. Remove from the oven and sprinkle with parmesan cheese and serve.
Notes
- You could use any type of cheese or meat and these would be delicious. I used deli ham and thin sharp cheddar cheese.
