- 2 cups variety of petite tomatoes
- 2 cups Persian cucumber sliced
- 1 teaspoon fresh parsley, chopped
- 1 small sprig fresh thyme, stem removed
- 1 teaspoon fresh basil, chopped
- 1 teaspoon fresh chive, chopped
- 1 small sprig fresh dill, stem removed and chopped
- 2 tablespoon extra virgin olive oil
- 1 tablespoon red wine vinegar
- Salt and Pepper to taste
- In a medium size bowl add tomatoes, cucumber, parsley, thyme, basil, chive and dill.
- Add 2 tablespoon olive oil and 1 tablespoon red wine vinegar.
- Season with salt and pepper.
- Gently toss.
- Serve immediately.
