Barbecue Pulled Pork

I was watching Guy on the food network a few nights ago and got an idea for an easy barbecue pulled pork recipe. He was at some dinner back east and the chef was from Kansas City. They had a fancy smoker, but a girl has to do what she can to make things happen. The chef from Kansas City created his own rub, which was similar to my New Mexico Spice Rub, he then added beer to the pork and a can of chipotle chilies to the mix. Ding, ding, ding a bell went off in my head. I can make something like that with my New Mexico Spice Rub and a can of chipotle chilies. So here you have it, this recipe is similar to the way I make brisket in the oven, cooking it at a low temperature and slow (12 hours) usually overnight. This pulled pork recipe baked at 250 degrees for 13 hours and it is the most tender pork I have ever had. No joke! I think it is amazing and for proof on that, my son ate three sandwiches, and when he was finished he said, "Mom this is my new favorite!" It is amazing stuff, if you like barbecue. Ingredients
- 5 pounds Pork Butt
- 1 can chipotle chilies
- Cecelia's Good Stuff New Mexico Spice Blend or
- Red Chile Spice Rub-
- 1 tablespoon garlic powder
- 2 tablespoon taco seasoning
- 1 tablespoon red chile powder
- 1 tablespoon paprika
- 1 tablespoon onion powder
- 1 tablespoon ground cumin
- Sesame Seed Buns
- Your favorite barbecue sauce
- I like the Kansas City Bold & Smoky from Trader Joe's
- and the Organic Sriracha & Roasted Garlic from Trader Joe's
- Another favorite is Cattlemen's Carolina Tangy Gold
Instructions
- Mix spices in small mixing bowl.
- Rub pork on both side liberally with the rub.
- Place in a baking pan and add chipotle chilies.
- Use a spatula to spread sauce around and one cup dark beer and cover with aluminum foil.
- Bake at 250 degrees for 13 hours. Allow pork to rest and cool.
- Shred pork with two forks.
- Add your favorite barbecue sauce and serve on a toasted bun.
- Top with Mexican Coleslaw.
