Cranberry & Orange Scones

Scones are so delicious and the perfect pastry for a light morning breakfast. I enjoy serving them to my family with some fresh fruit. This recipe is delightful with the combination of orange, cranberries, cinnamon and cloves. These scones pair nicely with tea or coffee. Scones date back to the 1500's notably created by the Dutch. Most of us know scones to be from England. The story goes like this . . . over a thousand years ago the Earl of Devon stepped up to rebuild the abbey after it was destroyed by Vikings. The residents of the abbey made bread (scones) for the workers to repay them for helping to rebuild their community. They served the workers, scones, cream, jam and tea as a gesture of gratitude.
Today most Americans eat scones for breakfast. Throughout Europe you can find them in most tea houses served with afternoon tea.

Ingredients
- 2 cups flour
- ½ ground flaxseed
- 1 cups dried cranberries
- 2 teaspoons baking powder
- ¼ teaspoon baking soda
- 1 stick of butter chopped into small pieces
- ½ cup heavy cream
- zest of one orange
- ¼ cup sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cloves
- Pinch of salt
- 1 egg (beaten well for egg wash)
Instructions
- Directions: In large mixing bowl add all dry ingredients; then add butter and cream, mix until dough forms small balls then add dried cranberries. Form dough ball and knead in mixing bowl with your hands until all chunks of butter are well blended. Flour your cutting board and divide dough in half, roll out dough into two circles. Dough should be about ½ thick. Cut into pie slice shapes. Place on a greased cookie sheet. Coat scones with egg wash and bake at 375 degrees for 18 –22 minutes. Scones are delicious for breakfast or as an afternoon snack with tea!
