Cranberry Chicken Salad

The warmer weather has me cooking lighter meals for my family. Chicken Salad is always a great light dinner option. And again something easy to prepare that doesn't take much effort on a busy Friday night when the kids are on their way out to play basketball and headed to a birthday party. I decided to get a little fancy with the chicken salad and snuck in some dried cranberries and poppy seeds. The kiddos loved it, and YAH . . . for me for sneaking in lots of healthy vegetables and fruit! I purchased the roasted chicken and crosaints from Costco. I simply love the croissants when they are super fresh and right out of the bakery, the box was still warm. And I didn't have any waste, I managed to use half the croissants for dinner and used the other half the next morning for toast with a plate of fresh fruit, juice and coffee. As a family on the go, you gotta love easy and simple menu options.

Ingredients
- 2 cups chopped roasted chicken
- 1 cup dried cranberries
- 1 cup chopped celery
- 1/2 cup chopped onion
- 1/2 cup mayonnaise
- 1 teaspoon poppy seeds
- Simple Arugula Side Salad
- 2 cups arugula
- 1 carrot peeled in large slices
- 1/2 cup cauliflower florets, chopped

Instructions
- In large mixing bowl combine chicken, onions, celery, cranberries, poppy seeds, and mayonnaise. Mix until well blended. Serve over a sliced croissaint .
