
Citrus Salad with Fig Dressing

Ingredients
- Citrus Salad
- 1 head of butter lettuce
- 1 cup cauliflower sliced
- 1 (12 ounce can) Mandarin orange segments
- 1 grapefruit segments (peeled and deseeded)
- 1 English cucumber sliced
- ½ cup orange flavored cranberries
- ½ cup candied pecans
- Fig Dressing
- 1/4 cup White Balsamic Vinegar
- 1/4 cup Extra Virgin Olive Oil
- 2 tablespoon Fig Preserves
Instructions
- In food processor add 1/3 cup balsamic vinegar, 1/3 cup olive oil, and ½ cup fig preserves. Pulse until all ingredients are incorporated.
- Salad Assemby: In large flat bowl layer your ingredients: salad, cauliflower, cucumber slices, cranberries, mandarin oranges, grapefruit slices and candied pecans. Drizzle with fig dressing and serve immediately.
