Chocolate & Cherry Bread Pudding

Valentine's Day is quickly approaching. What better way to show and spread your love . . . then bake something amazing like this “Chocolate and Cherry Bread Pudding”. Cherries and Chocolate are the perfect combination in any dessert. I adore cherries . . . especially desserts with cherries. I was grocery shopping at Trader Joe's one of my favorite places, if you follow me than you already know that. The lady at the counter asked what I was making with the goodies I bought. Specifically asking about the cherries. I said I was going to bake some bread pudding for dessert. She asked me what I would be putting into the bread pudding and I said I was thinking of mixing apples and cherries. She said you know what would be amazing with that dessert is dark chocolate. WOW – I thought to myself, awesome idea and that does sound amazing. I quickly thanked her for inspiration and went home and made this decadent dessert. What a perfect combination, almond, cherries and chocolate. It would have been even better if I had some slivered almonds to add on top, but sadly I didn't have any on-hand. Ingredients
- 4-6 rolls, cut into cubes (enough to fill a 9 x 12 baking pan)
- 3 cups whole pitted cherries, juice drained (may substitute frozen)
- 1 cup dark chocolate chips (I used mini chocolate chips)
- 8 eggs, beaten well
- 3 tablespoon melted butter
- 2 teaspoons almond extract
- 2 cups half and half
- 1/2 cup dark brown sugar
- 3 cups whole pitted cherries, juice drained (may substitute frozen)
For Garnish
- Hot fudge sauce
- Whipping cream or whipped topping
Instructions
- Directions: Cut or tear rolls into bite size pieces. Use some of the melted butter to coat the casserole pan. Place half of the torn rolls into a casserole pan. Then layer half the cherries and half the chocolate chips, add second layer repeating the bread, cherries and chocolate chips. In a mixing bowl add eggs and beat for approximately 30 seconds to one minute. Add melted butter, almond extract, half and half and brown sugar. Mix until all ingredients are well blended. Pour egg mixture over bread. Using a spatula press down on the bread, making sure it is fully covered in the egg mixture. This will insure that the bread can absorb the egg mixture, making the casserole tender and moist. Cover the casserole pan with foil bake in 375 degree oven for approximately 20 minutes. Uncover and continue to bake for 20 more minutes, or until center is firm.
- Allow bread pudding to cool for 15 or 20 minutes before cutting and serving.
- Garnish with hot fudge topping and whipping cream. Serve immediately.
Notes
- TIP - I think this would be even more amazing with slivered almonds on top. I would of added about 1/2 cups slivered almonds if I had them on-hand, but sadly I did not. Be careful not to brown them. I would bake it on a lower rack when baking it with almonds.
