Chipotle Black Bean Soup is my latest creation for a simple and easy dinner or lunch option! I was playing around with my old black bean recipe and wanted to make it spicy yet healthy and light. I served it with a cheese quesadilla, this made the kids super happy. If you are not a fan of spicy start with only one chipotle chile, taste it and continue to add more until you are happy with the heat index. I love spicy and so does my husband, the kids like it mild. This recipe for Chipotle Black Bean Soup can be garnished with all sorts of yummy things like avacado, tortilla chips, chunky pico de gallo - be creative and most of all have fun!

Ingredients
- Chipotle Black Bean Soup
- 32 ounces chicken stock
- 1 (10 ounce) can black beans (rinsed and drained)
- 1 (10 ounce) can enchilada sauce
- 1 teaspoon cumin
- ¼ garlic powder
- 1 teaspoon sea salt
- 4 chipotle chilies in adobe sauce; finely chopped
Garnish
- ½ Sour Cream mixed with 2 teaspoons chipotle sauce
- Cilantro
Instructions
- In a large soup pot over medium heat pour chicken stock into pot, add beans, enchilada sauce, cumin, garlic powder, and chipotle chilies. Simmer approximately 20 minutes or until all ingredients are thoroughly warmed. Mix soup with an emulsion blender until the soup is creamy and smooth about 3 minute; approximately 20 minutes. Serve immediately. Garnish with creamy chipotle sour cream and cilantro.
