Chili Dog

Vegetarian Chili served over a hot dog . . . sometimes you just have to indulge in some good old American food. Grilled hotdogs with chili and cheese, yes, some of lifes simple pleasures are not the healthiest, but I do indulge every so often. And if you are wanting a healthy option skip the hot dog and bun and enjoy a big bowl of the vegetarain chili, it is great all by itself. This chile is super easy to prepare and does not take a whole lot of effort, with a few simple ingredients you can have a nice bowl of vegetarian chili in no time at all.

Ingredients
- 1 can pinto beans
- 1 can black beans
- 2 cups water
- 1 cup mild red chili powder
- 1 tablespoon taco seasoning
- 1/2 cup chopped onion
- 1 tablespoon olive oil
- 1 clove garlic chopped finely
- 1/4 teaspoon cumin powder
- 4 hot dogs
- 4 hot dog buns
- 1/2 cup onion for garnish
- 8 ounces Fiesta Shredded Cheese (or mild cheddar)
Instructions
- In a medium sauce pan saute olive oil, onion and garlic until translucent. Add pinto beans, black beans, chili powder water, taco seasoning, and cumin powder. Simmer over medium heat for approximately 30 minutes or until chili has thickened.
- Grill hotdogs until warmed through about 5 - 10 minutes. Serve hotdog on bun, cover with desired amount of chile and garnish with cheese and chopped onions.
Notes
- Healthy Alternative: The vegetarian chili is a gluten free and dairy free option, so enjoy!
