
Cast Iron Chilaquiles
Breakfast never tasted this good! This is a new version of a traditional Mexican breakfast. I made it in a cast iron skillet. It is fairly simple to make you just have to find the right ingredients. The secret to this one is the spicy chorizo sausage. I bought it and the fresh tortilla chips at a local Mexican grocery store. Using sausage is not a must, you could easily substitute your favorite breakfast sausage and add some red chile flakes to spice it up. I hope you will make it soon.

- 2-3 tablespoons olive oil
- 3cups tortilla chips
- 1 pound chorizo sausage
- 1 15 ounce can, red enchilada sauce (gluten-free)
- 4 large eggs
- 1.5 cup shredded cheese
- Cilantro leaves
- Onion, diced
- Tomato, diced
- Heat a cast iron over medium-high heat. Add olive oil and chips.
- Then pour over enchilada sauce making sure to cover all the chips evenly.
- Cook for approximately 4-5 minutes or until the chips and enchilada sauce are heated through.
- Then form four semi-round circles around the pan and break eggs into each one.
- Cover pan with a lid for about 3-4 minutes.
- Add cheese and cover again for another 2 minutes or until the cheese is melted. The eggs should be cooked about medium
- Meat Free use beans instead, black beans would be perfect here!
- Dairy Free โ omit the cheese

Cast Iron Chilaquiles
I had chilaquiles in Mexico many years ago. The version I had was plain. It had crispy tortilla chips with enchilada sauce and some shredded cheese. I always add eggs for extra protein. You could fry them separate but I choose to add the eggs directly to the pan. Adding fresh tomatoes, cilantro and chopped onion also brightens up this dish. Plus it makes for a more balanced meal. You Gotta get the veggies in where you can!
