Caesar Salad with Kale

Hail the Kale! Caesar Salad made with kale, it doesn’t get much healthier than that. Caesar Salad is one of my family’s favorite salads. This is a new take on a very traditional recipe, minus the raw egg. I am still loving kale these days and wanted to make a healthy salad for a dinner party I was hosting. I used my old stand-by Caesar dressing and substituted kale for the romaine lettuce. I was pleasantly surprised with the results. Please let me know what you think. Ingredients
- 1 (6 ounce) bag of organic chopped kale
- 4 ounces grated parmesan cheese
- 1 ½ cup Cesar Croutons
- Caesar Dressing
- ¼ cup olive oil
- ¼ cup fresh squeezed lemon juice
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 4 -6 anchovy filets
- 1 garlic clove
- 1 teaspoon sea salt
- 1 tablespoon Worcestershire sauce
- Fresh ground pepper to taste
Instructions
- Caesar Dressing: In a blender add all the ingredients and blend until all ingredients are fully blended.
- Salad assembly: layer kale, croutons and parmesan cheese. Drizzle with dressing, toss well and serve immediately!
