Beef Barley Soup

Who doesn’t love a great bowl of homemade soup? For those of you that know me personally, you know that I love a delicious bowl of soup! I make it at least once a week for my family at Casa Linda during the winter months (Casa Linda is a name I gave my home here in New Mexico). I like making my own broth and freezing it so have on hand for batches of soups or stews. For Christmas we had prime rib and I used the bones to make beef broth, and even my precious dog Buster got to have some fresh beef broth over his dry food. (He loves me the most and now you know why, it will be our little secret.) The bones from the prime rib make some amazingly great broth so I froze it in three batches. Here is the first batch of soup. Beef Barley loaded with potatoes, carrots, green beans, peas, corn and barley. It was superb!

Ingredients
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon Salt + more to taste
- 1 teaspoon black Pepper
- 1 teaspoon parsley
- 1 teaspoon thyme
- 2 bay leaves
- 1 packet Lipton onion soup mix
- 2 cups mixed frozen vegetables (green beans, corn, carrots, peas)
- 2 cups chopped potatoes, with skin
- 2 tablespoons Worcestershire
- 2 cups cubed beef stew meat
Instructions
- In large stock pot add olive oil and sauté cubed beef, season with salt, pepper and cook until beef starts to brown on all sides. Add beef stock, barley, mixed vegetables, potatoes and season with Worcestershire sauce, parsley, thyme, chives and bay leaves. Simmer for 30 minutes until barley and potatoes are tender. Remove bay leaves and garnish with fresh parsley. Serve with crusty banquette.
