Inspiration comes to me in many forms. Today I was inspired by a yellow carrot. Seriously, I love color and it’s no wonder I have been in Advertising and Printing for nearly 26 years now! Okay, I just dated myself. That’s okay, with age comes beauty! Oh and Wisdom. Well if you learn from your mistakes that is . . . LOL! Well, as I was saying I was inspired by a yellow carrot and it said to me – “I would look really nice a colorful simple salad.”

Ingredients
3 ounces organic wild arugula
1 cup small mozzarella cheese balls, drianed and towel dried
1 cup petite plum tomatoes
1 Yellow Carrot, peeled in long strips
Basil Vinaigrette
¼ cup olive oil
¼ cup white balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon prepared pesto sauce
Fresh ground pepper and salt to taste
So here it is a SIMPLE, BEAUTIFUL and COLORFUL salad. Arugula with Petite Plum Tomatoes and Mozzarella Cheese.
Basil Vinairgrette Directions: In small mixing bowl add all ingredients and mix well until all ingredients are fully incorporated.
Salad assembly: Layer arugula, tomatoes, mozzarella cheese, and carrot shavings. Drizzle with vinaigrette and serve immediately!
Great served with a crusty loaf of bread.
