Apricot Danish

I promise this will be a funny . . . my husband went to our local growers market down the street at the park in our neighborhood. He came back with this beautiful Cherry Danish. I had it for breakfast with my morning cup of pinon coffee. Well I was expecting something so wonderful considering he paid $12 for it. When I bit into it – it was canned cherry filling mixed with canned apple filling. I kid you not! I was so disappointed.
Then, I got to thinking – I can make this Danish and I won’t use canned fruit. I will use the apricots my neighbor gave me fresh picked that same day! And so I went and bought the puff pastry dough and made the yummy filling and Voila – Apricot Danish. It was 100% better the French Bakery at the local grower’s market! And I only spent $4 on puff pastry and I got two Danishes! You can’t beat that and it was fairly easy. Letting it rise for 1.5 hours was the only thing that took some time. Have fun and get creative - you can really use any type of fruit you like. The orange zest is absolutely key.

Ingredients
- 1 Box of Puff Pastry Sheets (thawed and ready to use)
- 2 cups of chopped fresh fruit (shown here with apricots)
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- Juice from one orange
- Zest of one orange
- 1 egg (beaten)
- 1/4 cup slivered almonds
Instructions
- In small sauce pan add chopped fruit, ½ cup sugar, vanilla, orange juice, and zest.
- Mix well.
- Bring mixture to boiling point.
- Then reduce heat and simmer for 5 -7 minutes.
- Drain off excess juice and store in refrigerator to serve over vanilla ice cream.
- Allow fruit mixture to cool.
- Meantime, line cookie sheet with parchment baking paper.
- Place puff pastry onto cookie sheet.
- Cut the dough with a pizza cutter as shown.
- Take the remaining fruit and spoon into the puff pastry as shown.
- Gently fold the dough back and forth (as shown) until all fruit is fully covered.
- Transfer to baking pan and cover with egg wash.
- Sprinkle with almonds and cover with egg wash again.
- This will help almonds to stick to dough.
- Bake at 400 degrees on lower rack of oven for about 25 minutes or until dough is puffed and golden brown.
- Allow to cool 15 minutes before slicing.
- Serve and enjoy!

Place danish into a preheated 375 degree oven for 30 – 35 minutes. Allow to cool about 15 minutes before cutting and serving.
