Almond Pretzel Bark

I love making homemade gifts during the holidays. I find that friends and family really enjoy receiving a gift made with tender loving care. Each year I try to mix it up a little. This recipe is a new take on something I created a few years ago. This year I added roasted almonds instead of peanuts. I think this is the perfect mix of sweet and salty. The salty butter pretzels and the sweet caramel and chocolate make this the best bark recipe ever. It is my new favorite bark! I also like using dark chocolate and then finishing it with white chocolate, it makes for a lovely presentation. I am telling you people love, love, love this holiday bark. You cannot go wrong making this for your family or making it as a gift to give friends and neighbors. And one cookie sheet makes about 4 – 5 gifts. You gotta love that! Ingredients
- cooking spray
- 2 cups butter pretzels
- 1 package caramel, cut in half
- 2 cups chopped toasted almonds
- 4 cups melting dark chocolate wafers
- 1 cup white chocolate melting wafers
Instructions
- Pour almond onto cookie sheet and bake at 350 degrees for 3 - 4 minutes.
- Watch carefully not to burn nuts.
- Remove toasted nuts from oven and set aside.
- Meanwhile, grease a large cookie sheet with cooking spray.
- Wipe excess cooking spray with paper towel.
- Layer the cookie sheet pretzels.
- Slice caramels in half.
- Layer caramel in center of pretzel as shown.
- Put cookie sheet in a preheated 250 degree heated oven for 5-7 minutes or until caramel is slightly melted.
- Watch carefully not to over-heat, you do not want the caramel to run through the pretzels.
- Remove from oven and let cool about 10 minutes.
- Put almond into a large zip lock baggie.
- Crush nuts as shown below. (you are looking for medium chunks)
- Pour nuts over melted caramel and pretzels.
- Meantime heat 3 cups dark chocolate melting wafers in microwave on high for 45 seconds.
- Stir and heat again for another 45 seconds.
- Mix well until chocolate is smooth and runny.
- Microwaves vary on heat so you may have to heat a third round for 30 – 45 seconds.
- The chocolate is ready when it runs off the spoon easily.
- Careful not to overheat! Drizzle chocolate over pretzel, caramel and nuts.
- Slightly shake cookie sheet so nuts sink down into chocolate.
- Allow to cool about 15-20 minutes or until chocolate has a matte finish.
- Then melt 1 cup white chocolate for 30 seconds in microwave mix and heat again for another 30 seconds or until runs off spoon.
- Drizzle white chocolate over dark chocolate spooning careful to cover the tops of each pretzel.
- Allow to cool 15-20 minutes.
- Break into bite size pieces and place into airtight container to store.
Notes
- Microwaves vary greatly - you may only need to heat dark chocolate two times for 45 seconds to fully melt wafers.
