30 Minute Southwestern Chicken Bean Soup

Creating easy delicious meals for my family is so important to me. I love great food, and like every working Mother I want to save time. This is the perfect light evening meal and loaded with protein, healthy with lots of beans and roasted chicken. This is soup is perfect for leftovers. Leftovers are few and far between at Casa Linda, my kids are eating me out of house and home these days. They are growing so fast and can’t get enough to eat. Chuckle, chuckle . . . if you follow me regularly, then you know that I am always cooking, more often than not, I have food ready to serve in a moment’s notice, when the tears start streaming I am starving, what is there to eat (that would be Katherine, my daughter, Miss Drama). I makes me laugh every time it happens. Boys are much easier, except that my son Nicholas is trying to build muscle and he wants more protein. So when he asks for second dinner two hours later, I recommend more soup. Casa Linda is so full of life these days . . . they are growing up so fast. I am trying to treasure every moment. I hope that I inspire you to cook for your family and enjoy these precious moments.

Ingredients
- 2 cups roasted chicken, chopped
- 1 1/2 cups roasted corn
- 1 (10 ounce) can black beans
- 1 (10 ounce) can pinto beans
- 1 (10 ounce) can navy beans
- 1 teaspoon cumin
- ½ teaspoon garlic powder
- 1 chipotle chilies in adobe sauce; finely chopped
- 1 cup chicken stock
- 8 ounces Mexican Cheese blend
Instructions
- Pour chicken stock into soup pot, add corn, all three cans beans including their juice from each can. Season with cumin, garlic powder, and chopped chipotle chilies. Simmer on medium heat for about 20 minutes, then add the chopped chicken, cook for another 5 minutes. Serve into soup bowls and garnish with shredded cheese.

I finally made this and totally loved it. I was afraid of adding all the bean juices since i seem to always rinse them away when making other dishes. But, they blended perfectly and provided most of the wonderful flavor. Everyone enjoyed this southwestern flavors soup.
