I must admit even I get tired of cooking every day. Nachos are an easy and quick solution when we need something to eat in a hurry. I like grilling extra chicken just so I can use to make nachos. If you don’t have grilled chicken, you can use canned chicken breast or just leave the chicken off all together. Remember great food is fun and easy. Be creative use your favorite ingredients like cheese, beans, meat and serve with some delicious salsa or pico de gallo.

Ultimate Nachos
2- 3 cups Assorted Blue and Yellow Corn chips
1 (12 ounce) can rinsed and towel dried black beans
1 cup chopped grilled chicken (or turkey)
2 sliced jalapeño peppers
2 cups pepper jack cheese or Fiesta blend cheese
Layer chips on large cookie sheet and sprinkle with beans, chicken, sliced jalapenos and cover with cheese. Broil for 2 – 5 minutes until cheese is bubbly and melted, watch carefully not to burn chips. Garnish with your choice of salsa, guacamole, sour cream or avocado pico de gallo.
