Strawberry Limeade

With fall right around the corner, I feel like I have to make the most of my ice cold refreshing drink options. The temperatures are starting to drop in the evenings. Last night as I watered my garden, I would say it was chilly. The neighbor agreed. It is almost time for warm tea. Inspired to make the most of some strawberries that were about to turn bad and I wanted to use them up, so I made a batch of Strawberry Limeade. Talk about refreshing. It really hit the spot. The fresh mint makes everything taste better, but with the sweet ripe strawberries added, it was heavenly. The pitcher went fast, once the kids got home it was gone in ten minutes. I had just enough to feel satisfied. The leftover strawberries, lime and mint make a tasty pitcher of water. I don't like to waste food, so I refilled the pitcher and we drank flavored water the rest of the night. Warning, it doesn't store well overnight, the lime really overpowers the strawberries and makes it too tart.

Ingredients
- 1 cup boiling water
- 1 cup sugar
- 1 ½ cups fresh squeezed lime juice
- 3 cups ice 3 cups cold water
- 1 cup sliced strawberries
Garnish
- Mint
- Lime sliced
Instructions
- Mix one cup sugar with one cup boiling water, mix until dissolved. In large pitcher, add fresh lime juice and simple syrup mix until blended. Add 3 cups of ice plus 3 cups cold water mix until well blended. Add fresh strawberries. Serve over ice and garnish with a fresh mint sprig and a slice of fresh lime.
Notes
- TIP: For fresh homemade Lemonade simply substitute the lime juice with fresh squeezed lemon juice.
