Sundays at Casa Linda are always a relaxing day. We try to spend time together as a family and I always make a nice breakfast. Today it was Steel Cut Oatmeal with Cinnamon Apples. With spring around the corner I am feeling the need to eat healthy. Knowing I have to get in a swimsuit in four weeks also has some influence this fine morning.
I also wanted to make a healthy breakfast that everyone would enjoy! I had some apples that were a bit over ripe; that was truly my inspiration for this fine breakfast. This is a simple meal and I made it healthier by adding ground flaxseed, raisins and sautéed apples. I was extra careful not to use too much butter or sugar (watching the fat and calories.)
Cook oatmeal according to package directions. Before turning off heat add flaxseed and raisins and allow to set while you prepare the apples. In large sauté pan melt butter and add chopped apples; sprinkle with cinnamon. Cover and allow to sweat and soften, stirring as need. Allow to cook 10 – 15 minutes or until apples are soft (but not mushy!). Once they are soft, add the sugar mixing continually until the sugar is fully melted and begins to caramelize (about 1 – 2 minutes). Then add the apples and almond milk to the oatmeal mixture. Blend until all ingredients are combined. Top with walnuts or pecans and serve immediately!
