I love simple and easy meals. Especially at the end of the school year when things are happening almost nightly here at Casa Linda. I love a meal you can put together in around 30 minutes like this recipe for "Simple Fish Tacos with Chipotle Crema." This weeknight dinner was amazing! And best of all my kids love, love, love it. The secret is using a high quality fish stick with whole fish. They seriously make the taco. These were whole cod fish sticks, but you could use any type of fish stick. Just look for whole fish on the package. The chipotle crema also adds to the tacos by offering a nice spicy bite. If you like a little spice then you will love this stuff. If you are not a fan of spicy by all means leave it out. I think the sauce goes well with any taco or it is great on burgers too. The final touch is topping these tacos with fresh coleslaw and a fresh zesty lime. In my opinion it is Taco perfection! Let me know what you think of this recipe. Ingredients
- 16 Frozen Fish Sticks
- 8 corn tortillas
- 6 ounces prepackaged Cole Slaw
- 1 tablespoon fresh chopped dill
- 1 tablespoons olive oil
- 1 tablespoon mayonnaise
- 2-3 tablespoons fresh lime juice
- Salt to taste
- 1 cup mayonnaise
- 1-2 tablespoons chipotle chile sauce
Garnish
- Fresh dill for garnish
- Fresh lime sliced for garnish
- Cook Fish Stick according to package directions. Warm corn tortillas over grill and store in tortilla warmer until you are ready to assemble tacos. Mix prepackaged slaw with fresh dill, olive oil, mayonnaise, and fresh lime juice. Season with salt. Mix and set aside. In a small bowl add the mayonnaise and chipotle chile sauce. Mix until blended. For a mile sauce use one tablespoon chipotle sauce. For a slightly spicy sauce add 2 tablespoons chipotle sauce. Layer tortilla, fish sticks, coleslaw and top with chipotle crema. Garnish with dill and lime wedge. Serve immediately.
