Salmon Cakes are tasty and an easy dish to make. I always look for wild caught Salmon and when I can find it I buy extra. As a working Mom this is one recipe that I use again and again. The leftover salmon makes delicious Salmon Cakes. I have feed this to guests before and no one knew they were eating leftovers. This will be our little secret – wink, wink. All you Need:
3 cups Cooked Salmon
3 tablespoons mayonnaise
1 beaten egg
½ teaspoon old bay seasoning
Pinch of cayenne pepper
Pinch of dried dill
4 saltine crackers crushed finely
In a large bowl add saltines, fish, mayonnaise, egg and seasonings mix until all ingredients are incorporated. Do not over work. In a large non-stick frying pan on medium cook the patties until they are browned on each side. About 2 – 4 minutes per side – flip over only once – the patties are delicate. Serve over salad or rice.
