New Mexico Sushi or Tortilla Roll ups – which ever you want to call them, there a scrumptious. These appetizers are easy to make and are busting with flavor. I had some left over roasted jalapeños from a barbecue this weekend and was inspired to use them and not throw them into the trash. Roasted jalapeños have so much flavor, I always try to use them in a recipe when I can. I encourage you to try this recipe for the upcoming 4th of July Holiday weekend. Tortilla Roll Ups
New Mexico Sushi
Ingredients:
6 Large Flour tortillas
1 package cream cheese (room temperature)
2 roasted jalapeños, finely chopped (you may substitute raw or pickled jalapeños)
1/4 roasted red pepper, drained and finely chopped
½ teaspoon New Mexico Spice Blend (you may substitute Taco Seasoning)
1 ½ cups of Fiesta Cheese blend
Cilantro leaves for garnish
Directions: In mixing bowl add cream cheese roasted jalapeños, roasted red peppers, New Mexico spice blend, and mix until fully blended. Lay out tortilla and spread ¼ or cheese mixture onto tortilla, sprinkle shredded cheese blend and roll tortilla up into a tight roll. With a very sharp knife slice into bit size pieces and plate. Garnish with a single cilantro leaf. Serve immediately or store in an airtight container in the refrigerator for up to 2 days before serving.
