Summer is such a great time for fresh produce and one of my favorite summer produce items is fresh tomatoes. The heirloom tomatoes with the vibrant color just make for a beautiful dish. I found these colorful tomatoes at the market today and had to create a fabulous dish to share with you. And talk about simple and easy . . . wow, in just five minutes you have a beautiful salad to share with your guests for the Fourth of July weekend. I hope you enjoy this recipe. Happy Fourth of July!

Heirloom Tomato Salad with Feta
1 pound heirloom tomatoes; sliced
1 sprig fresh oregano leaves
1 cup crumbled Feta Cheese
Vinaigrette
½ cup Olive Oil
½ cup red wine vinegar
½ teaspoon dried Greek oregano
½ tablespoon whole grain Dijon mustard
½ teaspoon sea salt
fresh ground pepper to taste
Dressing: In small mixing bowl add all ingredients and mix well until all ingredients are incorporated. You can also use a blender.
Salad assembly: layer tomatoes, oregano leaves, and crumbled Feta cheese on serving dish and drizzle with vinaigrette. Serve immediately.
