Heirloom Tomato & Arugula Salad

I am feeling so blessed, my garden is still producing these amazing heirloom tomatoes, I haven't had to buy tomatoes all summer and that is a first for me! I really think the cooler temperatures early on and the extra rainfall we had made a tremendous difference for my tomato plants this year. I was at the growers market this morning and it seems that I am not the only person that had a bumper crop. Tomatoes were definitely in abundance at the growers market. I love using heirloom tomatoes because they are so vibrant in color and it makes for beautiful salad. The arugula came from Trader Joe's, but you can find fresh organic arugula in most grocery stores these day in the produce isle. This salad is simple and easy to make. Ingredients
- 4 ounces arugula
- 1 large heirloom tomato; sliced
- 1/4 cup crumbled Feta Cheese
Vinaigrette
- 1/4 cup Olive Oil
- 1/4 cup red wine vinegar
- 1 teaspoon prepared Pesto
- 1/2 teaspoon chopped fresh oregano
- ½ tablespoon whole grain Dijon mustard
- ½ teaspoon sea salt
- fresh ground pepper to taste
Instructions
- Dressing: In small mixing bowl or blender add all ingredients and mix well until all ingredients are well blended.
- Salad assembly: layer tomatoes over arugula and sprinkle with crumbled Feta cheese, a few fresh oregano leaves and drizzle with vinaigrette. Serve immediately.

White balsamic vinegar is preferable for this salad as it shows off the beautiful colors of the heirloom tomatoes.
