Easy Asian Chicken Salad with Spicy Peanut Dressing

Easy as one, two, three . . . Asian Chicken Salad with a Spicy Peanut Dressing! Seriously, this is a fabulous recipe and it only took less than ten minutes to make it. I bought all the ingredients at Trader Joe's except for the sesame seeds, I had those on hand. If you love raw crunchy salads this is definitely a winner! Normally I make all my dressings, but I knew I only had about 15 minutes to get some dinner on the table tonight because we had to go to a basketball game. And even with all the rushing, it turned out to be a great light dinner with the extra protein from the chicken. The kids loved it and that always makes me happy. The spicy peanut dressing was only slightly spicy so it was great for the kiddos. I added extra chopped salted peanuts as a garnish and it was nice to have a little extra crunch as well as the extra salt. The cilantro leaves where a nice touch because it gave it some flavor. If you are not a fan of cilantro - fresh parsley would have also fared well with this combination of raw veggies. I hope you enjoy this salad as much as my family did. I would love to hear from you. Ingredients
- 1 cup spicy peanut dressing
- 1 cup broccoli slaw
- 1/2 cup julienned carrots
- 1 cup edamame beans
- 1 cup sliced cucumbers
- 1 cup cilantro leaves, slightly chopped
- 1 cup chopped roasted chicken
- Black sesame seeds (or regular sesame seeds are a great substitute)
- Salted roasted peanuts for garnish (about 1/4 cup, chopped)
Instructions
- Chop Roasted Chicken and set aside. In a large mixing bowl or salad bowl, add the broccoli slaw, carrots, edamame beans, scallions, cilantro, cucumber and spicy peanut dressing. Add sesame seeds and toss until all ingredients are covered with dressing, garnish with peanuts and serve.
