Croissant French Toast with Bananas and Raspberries

I love Easter and everything that goes with it. It is a special time to reflect on my spiritual side and be grateful for the many blessings I have in my life. My family is most precious and I love spending holidays with the people I love most. This year our Easter gathering was very small and intimate, which was just fine. My son Nicholas gave the Easter Blessing before dinner and it made me proud that he has grown into a wonderful young man. As I listened to him pray, I prayed too and thanked God for him and my beautiful family, my life would not be the same without them. I find so much pleasure in cooking great meals for them. To me FOOD = LOVE, not so much that I love food, but that I express my love through cooking food for those people that mean so much to me. I am grateful for it all, and to have the opportunity to share it with you is even more satisfying. Each Easter morning, I make something special and this year I made this amazing French Toast Casserole using some croissants and mashed bananas. It was delectable. Here is the recipe. Ingredients
- 4 -6 Day old or older croissants, cut into cubes (enought to fill a 9 x 12 pan)
- 8 eggs, beaten well
- 1 teaspoon vanilla bean paste
- 1 teaspoon cinnamon
- 1 cup mashed bananas (about 2 ripe bananas)
- 1 cup whole milk
- ¼ cup dark brown sugar
For Garnish
- Fresh sliced bananas and raspberries
- ½ cup Maple Syrup
- 3 tablespoons butter
Instructions
- Cut croissants into bite size pieces. Place into a 9 x 13 casserole pan. In a mixing bowl, beat eggs well, then add milk, vanilla and cinnamon, then add mashed banana mixture. Mix until all ingredients are well blended. Pour over croissants, using a spatula press down on the croissants, making sure they are fully covered in the egg/milk mixture. This will insure that the croissants can absorb the egg/milk mixture. Sprinkle mixture with brown sugar, and bake in 375 degree oven for approximately 35 minutes, or until center is firm. In a small bowl melt the butter in the microwave for 10 – 15 seconds and add in the maple syrup. Before serving microwave the syrup and butter mixture, cut casserole into 12 serving pieces, drizzle individual servings with butter maple syrup mixture, top with fresh cut banana slices and fresh raspberries.

Amy, Yes, it is a combination of French Toast ingredients. I works well with all sorts of breads, but because the croissants were dry, it absorbed the liquid quickly, normally I would have to soak other bread overnight. Thanks for stopping by.
