
PINTEREST Friendly Recipe – Croissant French Toast with Bananas and Raspberries


- 4 -6 Day old or older croissants, cut into cubes (enought to fill a 9 x 12 pan)
- 8 eggs, beaten well
- 1 teaspoon vanilla bean paste
- 1 teaspoon cinnamon
- 1 cup mashed bananas (about 2 ripe bananas)
- 1 cup whole milk
- ยผ cup dark brown sugar
- Fresh sliced bananas and raspberries
- ยฝ cup Maple Syrup
- 3 tablespoons butter
- Cut croissants into bite size pieces. Place into a 9 x 13 casserole pan. In a mixing bowl, beat eggs well, then add milk, vanilla and cinnamon, then add mashed banana mixture. Mix until all ingredients are well blended. Pour over croissants, using a spatula press down on the croissants, making sure they are fully covered in the egg/milk mixture. This will insure that the croissants can absorb the egg/milk mixture. Sprinkle mixture with brown sugar, and bake in 375 degree oven for approximately 35 minutes, or until center is firm. In a small bowl melt the butter in the microwave for 10 โ 15 seconds and add in the maple syrup. Before serving microwave the syrup and butter mixture, cut casserole into 12 serving pieces, drizzle individual servings with butter maple syrup mixture, top with fresh cut banana slices and fresh raspberries.

For this recipe I used leftover dried out croissants, I know that doesn’t sound appetizing but it made this amazing Croissant French Toast with bananas and raspberries. The good news was that I didn’t have to soak it overnight, because the croissants were dry they absorbed the moisture from the egg and milk mixture quickly. I made this for Easter breakfast. It would be perfect for a brunch. It made a beautiful presentation.

The secret ingredients is the vanilla bean paste, that stuff works wonders in recipes. The fresh banana and raspberries were the perfect compliment to this Croissant French Toast recipe. Kitchen Table at Casa Linda

Amy, Yes, it is a combination of French Toast ingredients. I works well with all sorts of breads, but because the croissants were dry, it absorbed the liquid quickly, normally I would have to soak other bread overnight. Thanks for stopping by.
