Creamy Beef Barley Soup

Creamy Beef Barley Soup is the ultimate comfort food. The mushrooms add a depth of flavor and earthiness to this recipe. This hearty dish is loaded with big chunks of tender beef, mushrooms, barley, fresh herbs and spices. It is fairly rich and bold in flavor, so a little goes a long way. This recipe makes a terrific dinner option or if serving it for lunch a cup is the perfect portion with a side salad. The man in your life will be thanking you for days and then beg you to make it again very soon. Ingredients
- 2 tablespoons butter
- 2 garlic cloves, minced
- 2 cups sliced mushrooms
- 1 cup diced onions
- 1 teaspoon Salt + more to taste
- 1 teaspoon black Pepper
- 1 teaspoon parsley
- 1 teaspoon thyme
- 2 bay leaves
- 2 cups heavy cream
- 32 ounce beef stock
- 1 cup barley
- 2 tablespoons Worcestershire
- 2 cups cubed beef stew meat
Instructions
- Directions: In large stock pot sauté butter, garlic, mushrooms, cubed beef, salt, pepper and onion for twenty minutes until fully cooked. Add beef stock, barley and season with Worcestershire sauce, parsley, thyme, chives and bay leaves. Simmer for 30 minutes until barley is tender. Remove bay leaves and add 2 cups heavy cream, allow to warm through about 3 minutes. Remove from heat and serve. Garnish with fresh parsley and serve with crusty banquette.
