Cranberry Coconut Apple Crisp

Fall and apples just seem to go together. Maybe it has something to do with the fact that is when you can find the tastiest apples of the year. I have expressed numerous times how much I love a good apple crisp, I even like eating it for breakfast. I can’t be all that bad it is loaded with apples, cinnamon, oatmeal, fresh squeezed orange juice, when you really think about it has some healthy breakfast ingredients. So for now we will forget about the sugar content and concentrate on the good stuff!
I always have lots of apples on hand in the fall and people are always giving me apples from their trees and these apples were no exception. I wanted to use them up before they got over ripe. Well I day I thought to myself I want to try something new, I looked in my over crowded pantry and found some cranberries I had bought to make scones and never did, so I used them. Well that is a great idea, what if I add some coconut to the topping that seems like a good combination and it would allow the coconut to toast in the topping. Well it all worked fabulously together and here is the final recipe! I hope you enjoy it as much as I did and remember to comment below and let me know what you think.

Ingredients
- 10 medium firm granny smith apples
- 1 cup dried cranberries
- 1 small orange – grated orange zest
- 1 teaspoon grated lemon zest
- 2 tablespoons freshly squeezed orange juice
- 2 tablespoons freshly squeezed lemon juice
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
For the topping
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 3/4 cup light brown sugar, lightly packed
- 1/2 teaspoon salt
- 1 cup old-fashioned quick cook oatmeal
- 1 cup shredded sweetened coconut
- (1 stick) unsalted butter, melted for 45 seconds on high in microwave
- 1 cup unsweetened applesauce
- Garnish with a big scoop of vanilla bean ice cream – I like the good stuff!
Instructions
- Preheat the oven to 350 degrees F. Peel, core, and cut the apples into medium slices. Put the apples slices and cranberries in a large mixing bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg. Toss well and then pour into a 9” x12” x 4” baking dish.
- For the topping: combine the applesauce, flour, sugars, salt, oatmeal, coconut and the melted butter a large mixing bowl and mix until the mixture is well blended. Sprinkle over the fruit, covering the fruit completely.
- Place the baking dish on a sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm with vanilla ice cream.
